Crispy Chicken Sushi Burger

Ingredients
- Meadow Vale Crispy Battered Chicken Fillet x 1
- Sushi Rice x 100g
- Sushi Nori x 2 sheets
- Roasted Red Peppers x 20g
- Sushi Dipping Sauce x 50ml
- Rocket x 10g
- Panko Breadcrumbs x 100g
- Eggs x 2
- Plain Flour x 100g
Method
Step 1
Cook the Sushi Rice and the Crispy Battered Chicken Fillet using your preferred method. Once cooked, spread the rice on a flat tray to cool.
Step 2
Once the rice has cooled, lay cling film on a flat surface. Then, place 2 sheets of Sushi Nori on top and spread an even layer of rice over them.
Step 3
Add the Roasted Red Peppers and the Crispy Battered Chicken Fillet on top of the rice. Using the cling film for support, shape the rice and filling into a firm patty (similar to a burger shape).
Step 4
Coat the sushi burger in flour, then dip in beaten egg, and finally coat in breadcrumbs until completely covered.
Step 5
Deep-fry the breadcrumbed burger until golden brown. Slice down the centre. Serve.
