Signature Chicken Over Rice
Inspired by the bold flavors of the Middle East, our Signature Chicken Over Rice features tender, juicy chicken infused with aromatic spices, served over fluffy rice for a truly mouthwatering experience.
Ingredients
- Sizzling Original Chargrilled Chicken Skewer x1
- Lemon & Herb Rice x 200g
- Spring Onions x 10g
- Chicken Stock
- Chillies x10g
- Sliced Coriander x 3g
- Pink pickled onions x 15g
- Mint Yoghurt x 15ml
Method
Step 1
Place 1 cup of rice into pan and add 1 teaspoon of Turmeric and add 2 cups of chicken stock. Bring to the boil then turn down to a low simmer, add peas with a lid on until the rice becomes fluffy. To finish add some juice of a lemon.
Step 2
Cook the Sizzling Chicken Skewer using your preferred cooking method. Whilst the chicken is cooking, wash and slice the spring onions, chillies and coriander.
Step 3
Once cooked place the rice in a serving bowl and drizzle over mint yoghurt. Next remove the chicken from the skewer and layer over the top. Sprinkle over the spring onions, chillies and coriander. Serve with some pickled red onion on the side.
